JANESVILLE

 A Texas chain known for its chicken fingers is opening its first Wisconsin restaurant in Janesville, in a former Fazoli’s on Humes Road.

Fazoli’s closed its doors at 2105 Humes Road in December.

Layne’s Chicken Fingers franchise owner Lucas Bergeson and his family plan to open at that site in Janesville, and to soon afterward open two other locations in the state.

They hope to open the Janesville restaurant in April. Work is already underway on upgrades and changes inside and out, including new landscaping.

Bergeson, his brother Josh, father Randy and a partner Yodani Hernandez already own 5 Mooyah burger restaurants in Madison, Sun Prairie and Fitchburg.

According to its website, Mooyah is a fast-casual burger chain headquartered in Plano, Texas.

Lucas Bergeson grew up in Darlington, about an hour from Janesville in southwest Wisconsin, and visited Janesville as a child.

He currently lives in Brooklyn, near the Dane-Rock County line.

Bergeson said Janesville is a great location for Layne’s.

“I’ve always enjoyed Janesville, it has that ‘everyone knows everyone’ vibe like my hometown,” he said. “When the space became available, it was perfect.”

Bergeson said Layne’s Chicken Fingers’ chicken is unlike anything now available in Wisconsin’s fast-food chicken market.

“Our biggest goal was to find a restaurant that served whatever they do better than anyone else,” he said.

Bergeson said they researched restaurants and blind taste-tested a lot of chicken in the process, including from Layne’s, Raising Cane’s, Kentucky Fried Chicken and Chick-Fil-A. Lanyne’s stood out.

“The food sells itself, it’s so good,” he said.

Layne’s menu has regular and spicy chicken and sandwiches but it does one thing really well: chicken fingers, Bergeson said. Those come with specialty sauces like homemade ranch, honey mustard, specialty Layne’s sauce, barbecue and jalepeño ranch.

He said Layne’s chicken is marinated in-house for 48 hours and its fries and everything else is reasonably priced.

“You get quality food, full of flavor, without breaking the bank,” he said.

Bergeson was in Texas last week, training and visiting the corporate office, and said he ate Layne’s chicken for six days and still “craves it.”

He said the Janesville restaurant expects to offer jobs with competitive pay and benefits and the franchise owners look forward to being involved in the broader community.
